Choco Coffee Cake – Another guest post
Hello hello hello! How are you guys doing? How are you all enjoying this chili winter? It’s freezing in here. Brrrr!! I am eagerly waiting for spring’s arrival so that I can start planting my herbs/vegetables.
On 2-10-12, we were celebrating our 2nd wedding anniversary and we had a great time. My hubby made it very very very special. I made a very special “Chocolate truffle cake” for him which was absolutely delicious and he took me out on a lunch date followed by lots of shopping and a movie. It was just perfect! Loved it 🙂 Thank u V! Love you lots :).
It doesn’t end here because it’s even more fun when you get to celebrate it all weekend along, isn’t it? Yup we are still in the celebration mode. In fact, few of our very good friends gave us a surprise Anniversary party yesterday night and made it even more special. It’s a blessing to have good friends in your life. And today we are going spend our evening enjoying a live musical performance. Excited!
Getting back to the post, I have invited another friend of mine Raji of vegetarintastebuds to host a guest post on ZaikaZabardast. She is my very first blogging buddy who has been always motivating and kind. Her recipes are always mouthwatering. Do not miss out her new take on using a bottle gourd in a chocolate cake. Yup, you heard it right. Squash in a cake… I was so amazed by her creation! I am very happy to have Raji sharing her beautiful “Choco coffee cake” recipe and here I am handing it over to her.

Grishma is a wonderful budding blogger and it’s a pleasure to know her in this virtual world. She has a lovely blog with wow recipes, her blog instantly transports you to a world which offers a wide variety of dishes. Her recipes want you to reach out and grab the dishes from the screen. For this talented and bubbly girl I whipped up a Choco Coffee Cake in ramekins which is simple to make and instantly satisfies the sweet craving. If you are a lover of chocolate and coffee combination then this is a must make recipe.
Ingredients: (Makes 2 large cup/mug/ramekins)
- All Purpose Flour- 1/2 Cup
- Light Brown Sugar- 1/2 Cup (firmly packed)
- Unsweetened Cocoa Powder- 3 heaped tablespoons
- Instant Coffee Powder- 1 heaped teaspoon
- Canola Oil- 4 tablespoons
- Soy Milk or Dairy Milk- 5 tablespoons
- Baking Powder- 1/2 teaspoon
- Salt- A Pinch
Optional-
- Few tablespoons of chocolate chips
- Few caramel candies
- M&M’s
Procedure:
Preheat the oven at 190 degrees C and then in a bowl mix together dry ingredients and then add in oil and milk. Mix everything together well so that there are no lumps. Pour the mixture in greased ramekins and bake for 20-25 minutes or till a toothpick inserted in the centre of the cake comes out clean.
For my kiddo I added few caramels in the batter and decorated the top with few M&M’s.
Let the cake cool a little and enjoy.
